THE idea behind I.J. Mellis, Cheesemonger grew from founder Iain Mellis' desire to keep old-fashioned values while using cutting edge technology to bring out the best in artisan cheese.
It's a vision that's proved a hit and in the past 16 years, he has re-written shopping lists all over Scotland as people taste the difference and keep coming back for more. Mellis has shops in Edinburgh, Glasgow, St Andrews and Aberdeen.
As Iain is determined to demonstrate, farmhouse cheese differs from mass-produced factory cheese because the milk comes from a single herd rather than several different sources. And a quick chat with Findlay Wood, manager in the St Andrews shop, will reveal amazing facts about the influence the time of year and the type of grass eaten by the milk-producing animals have on the product before you.
A former chef, who openly admits to an enduring love of cheese, the Cheltenham-born 23-year-old moved to Scotland, the birthplace of his parents, intending to continue his catering career. However when he saw the job at Melllis' he applied and was successful. Eight months ago, he was promoted to manager and his enthusiasm has, if anything, grown.
As you'd expect in St Andrews, Findlay's met a few celebrities. Hugh Grant has been in and chef Gordon Ramsay got in touch to ask Mellis to supply his restaurant in Claridges in London. "That was something, as all the head chefs I'd worked for know Ramsay. Mellis now regularly supplies his restaurants," he added.
